Apart from the question of a balanced and/or appropriate diet (protecting health), technological innovations in the field of agro-food production (such as processing or conservation processes) and new products (e.g. oligofructoses) must also be examined from the point of view of public health. For instance, effective microbiological and epidemiological controls call for not only better methods for identifying and fingerprinting pathogenic microorganisms but also responses to recent challenges in the field of the production and distribution of fresh products and prepared meals.
The links between diet, pollution and health constitute another field of action. In this respect, we must not only determine the volume of contaminants - such as heavy metals - ingested through foodstuffs but also pay more attention to the growing problem of food allergies.
These aspects, among others, form the subject of the impulse programme "Food-Related Health Hazards" managed by the Federal office for scientific, technical and cultural affairs (1990-1995), in which four research fields have been identified:
The results of this programme constitutes the rational basis for recommendations, in the fields of public health, agro-food production and distribution and R&D policy.
